To best taste the FRANCAE ® wines

we’d suggest you keep the bottles in a cool and dark place and avoid having them in the freezer to reach the correct temperature of servic.

The thermal changes compromise the balance and distort its aromas.


TRADITIONAL METHOD SPARKLING WINES



TEMPERATURE


The optimal service temperature for FRANCAE ® sparkling wines is between 8 and 10 degrees.

It is a good rule of view a higher temperature for the drier wine (10 degrees for pas dosè and 8 degrees for brut).


UNCORKING


Remove the capsule and the wire cage while always holding your hand on the cork.

Tilt the 45-degree bottle from the base, hold the cork between the index finger and thumb of your left hand and rotate the bottle with your right hand, until you have the precise feeling that it’s about to go away, at this point hold it back and uncork it so softly that it will come out CO2 almost without some noise


RINSING


Rinse with wine the glass to eliminate impurities or micro-residues that can compromise the scents and aromas of FRANCAE ® wines.

To do this, pour a finger of wine into the first glass, rotating so that its walls are evenly wet, empty the contents in the second glass, and so on until you have rinsed with wine the last glass that you will empty in the bucket.


TASTING


Pour slowly to avoid damaging the fine perlage and place the FRANCAE ® in a bucket with a bit ice to maintain the ideal service temperature.


STILL WINES



TEMPERATURE


 The optimal service temperature for our GIRO is 10 degrees for our TONDO is 15 degrees.              


OPENING


Engrave the capsule under the “cercine” with the knife first clockwise then counterclockwise without moving the bottle, avoid abrupt movements, the wine should not be “disturbed“.

Then engrave the capsule vertically and remove it.

See the worm clockwise to the center taking care to stop before the last lap so as not to pierce the cork.

Gently pull it out using first the shorter lever then the longest lever of the corkscrew.

Clean the neck of the bottle from possible cork residue with a napkin or a special “frangino”.


RINSING

TASTING


Wait a few minutes before pouring it so that our wine has time to oxygenate.

Slowly pour the wine into the glass and place the bottle of TONDO FRANCAE ® on the table and that of GIRO FRANCAE ® in a bucket with little ice to maintain the ideal service temperature.


WHAT NOT TO DO


NO! Fill the glasses by pouring impetuously:

because the bubbles are split. To promote the integrity of perlage it is preferable to pour a small amount of sparkling wine slowly, tilting the previously screwed glass.                                                                                   


NO! Keep the bottle from the neck.

NO! Too cold,

because a wine served frozen has a reduced effervescence, altered aromas and anesthetizes the palate


NO! Too hot

to avoid excessive foaming and rapid loss of aromas.


NO! Store wine in spaces where you hone sausages or cheeses,

because the wine is a “sponge” and it absorbs odors and spores derived from the aging of sausages and dairy products that can irreversibly compromise the organoleptic properties.
